How to Make Kettle Chip Crusted Fried Green Tomatoes

Combine the crispiness of kettle chips with the tangy goodness of fried green tomatoes in this unique and flavorful recipe. The crunch of the kettle chip crust adds a delightful twist to this Southern classic, creating a perfect appetizer or side dish.

Ingredients:

  • 4 large green tomatoes, sliced into 1/4-inch rounds
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups kettle-cooked potato chips, crushed
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Vegetable oil for frying
  • Optional: Buttermilk ranch dressing for dipping

Instructions:

Preparing the Tomatoes:

  1. Slice the green tomatoes into rounds, about 1/4-inch thick.
  2. Lay the tomato slices on a paper towel and sprinkle them with a little salt. Allow them to sit for 15-20 minutes to draw out excess moisture.
  3. Pat the tomato slices dry with additional paper towels to remove any remaining moisture.

Creating the Coating:

  1. In a shallow dish, combine the crushed kettle chips, paprika, garlic powder, salt, and black pepper. Mix well to evenly distribute the seasonings.

Breading the Tomatoes:

  1. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with the kettle chip mixture.
  2. Dredge each tomato slice in the flour, shaking off excess.
  3. Dip the floured tomato slice into the beaten eggs, ensuring it is fully coated.
  4. Press the egg-coated tomato into the kettle chip mixture, making sure the chips adhere to the surface. Repeat for all slices.

Frying the Tomatoes:

  1. In a large skillet, heat vegetable oil over medium heat until it reaches 350°F (180°C).
  2. Carefully place the coated tomato slices into the hot oil, ensuring not to overcrowd the pan.
  3. Fry for 2-3 minutes on each side or until golden brown and crispy.
  4. Use a slotted spoon to transfer the fried green tomatoes to a paper towel-lined plate to drain excess oil.

Serving:

  1. Sprinkle the hot fried green tomatoes with a pinch of salt immediately after removing them from the oil.
  2. Serve the kettle chip crusted fried green tomatoes hot, either on their own or with a side of buttermilk ranch dressing for dipping.
